Orderer's remorse: when you're out to eat with someone and, the second your meals arrive, you know you should have had what they're having. I recently experienced an extreme case while out for breakfast with Kevin, when his eggs appeared accompanied by a great-looking salad. However many servings of fruits and greens we're now supposed to get (five? nine? until we turn colors?), I know I always fall short. Why don't salads make early appearances more often? I've been trying this out for a week, and I think I have the answer: the combination of too much chewing and too many vivid greens before you're warmed up may send you straight to the Pop-Tarts box. Then, I discovered this little recipe that may just have it all... Shredded Carrot Breakfast Salad, courtesy of Mr. Breakfast (www.mrbreakfast.com.) (2 servings) • 2 medium shredded carrots • 1/2 small can crushed pineapple with juice • A handful of raisins • 1/2 cup of orange juice • pinch cinnamon • pinch nutmeg • Approx. 1 cup old fashioned uncooked oatmeal (or cooked rice, bulgur, or raw millet) Mix all, stirring in enough old fashioned uncooked oatmeal to soak up the juice -- the longer it sits, the more juice the oats will absorb. Goodness in a bowl!
